Creamy Chicken Carbonara without the Bloat

Nostalgia
Now, thinking back, I started to enjoy cooking from quite a young age. Coming from an Italian family, from a very young age, we helped my Grandma and Nonna make fresh homemade pasta and gnocci, homemade pasta sauce, biscuits and savoury snacks and being a part of the cooking process was a much loved time to spend together.
So having this introduction, and an ingrained love of preparing food, the first meal I ever made on my own at home, I was probably about 10/11 years old and from there, once or twice a week I would plan out my dinner choice and get to cooking. I am sure my parents had no complaints there haha.
So my love of cooking has always been there, but I have sure have come a long way from the handful of go-to dishes I used to cook as a 11-16 year old, with a much larger variety of meals that I now enjoy creating and cooking for my family and Purely Peach community.
One of my go to's back in the day was a Creamy Chicken and Bacon Carbonara and we probably had it once a week every week for a while there haha. So there is something quite nostalgic about a creamy plate of pasta for me, and through my work in helping others to learn to love food again, while simultaneously helping them to lose weight and improve their digestive health, I really love adapting home faves to be healthier versions to help people achieve their goals.
Hearty Winter Warmers and Weight Loss
Winter is coming in faster and colder over here is Aus, and it is the time where winter warmers are craved and often that means the hearty carb heavy meals tend to be on the table moreso. Which isn't a bad thing at all!
BUT if you are reading this, there is a high chance you might be trying to lose weight, are intolerant to gluten/dairy or just looking for a slightly healthier alternative for the family to the traditional winter warmers you have come to love.
And the great news is, with a little bit of tweaking, you can still thoroughly enjoy your winter faves while aiming to lose weight.

Creamy Sweet Potato and Cashew Chicken Carbonara
Serves 6
350 calories 28g Protein 36g Carb 12g Fat
Ingredients
150g Sweet Potato
1 Clove Garlic
1/3 cup Cashews
3/4 cup Massels Vegetable Stock
1 tsp Paprika
1 tsp Turmeric
1 Lemon
1/2 cup Unsweetened Almond Milk
250g San Remo Pulse Pasta
1 Tbsp olive oil
4 slices Shortcut Bacon
1 Onion
400g Chicken Breast
200g Mushrooms
6 cups Spinach
15g Biolife Vegan Cheese
1 Red Chilli
Parsley
Method
Peel and dice the sweet potato and cut it into cubes.
Place the sweet potato, cashews and vegetable stock in a pot and bring to the boil. You can add a little water as you go if there isn't enough liquid covering everything. Cook until sweet potato has softened.
Meanwhile, bring another pot of water to boil and cook the pasta until soft.
Dice onion, bacon, mushrooms and chicken breast and place to the side.
In a frying pan, heat the olive oil. When hot, add the chicken breast and bacon and brown.
Add the sliced mushrooms adn onion and cook for 5 minutes until the veg have softened and slightly browned.
Once the sweet potato, cashew mix has cooked, place it in a blender along with the paprika, turmeric, garlic and juice of 1 lemon and blend until smooth.
Add the sweet potato/cashew sauce to the frying pan along with 1/2 cup almond milk and stir through the carbonare mix thoroughly.
Cover frying pan and bring to the boil, before reducing the heat and allowing the sauce to reduce.
When sauce has begun to reduce, add the spinach leaves and grate the vegan cheese and stir through until spinach has wilted.
Remove sauce from stovetop and mix through the pasta.
Top the pasta with sliced red chilli and fresh parsley and divide into 6 portions.
